Hydrophobic

Water-fearing or water-repelling. Hydrophobic molecules don't dissolve in water and tend to cluster together to minimize water contact.

Biological Context

Oils, fats, and the interior of cell membranes are hydrophobic. Hydrophobic interactions help proteins fold correctly and keep membrane interiors sealed. The hydrophobic effect is a major force in biological structure.
